Oven Roasted Parsnips

You will need:

Oven baking pan

Potato peeler

Large Bowl 


5-7 Parsnips

2 Tablespoons fresh lemon juice

1 Tablespoon extra-virgin coconut oil

1/2 teaspoon black pepper

1/4 teaspoon Himalayan pink salt

1/4 cup chopped fresh parsley

1 Tablespoon Coconut Aminos


2. Peel and cut parsnips into fries or chips.The big ones can be too thick. Try to get medium to small parsnips. They will have a better flavor and are softer when cooked.

3. Once chopped, put them in a big bowl and toss with oil, salt, pepper, and coconut aminos. It's okay if the coconut oil doesn't all the way melt. This will happen in the oven.

4. Add Parsnips with left over seasonings in a single layer in the oven baking pan. 

5. Roast for about 20 Minutes until they start to turn golden brown. Toss them , then roast for another 10 minutes or so. 


Cooking time varies depending on how thick you cut the parsnips. Be sure to check on them especially if cut thin or small.
