Veggie Breakfast Stir Fry

Breakfast Quinoa Stir Fry



You will need:

Large Sauce Pan or Pot

Stir Fry Skillet



Ingredients:

1 Cup Water

1/2 Cup Quinoa

1/2 Cup Broccoli

1 Tablespoon Liquid Coconut Aminos

1/4 Cup Red Onion

1 Tablespoon Toasted Sesame Oil

1 Clove Garlic

1 Cup Kale

1 Tomato

1 Tablespoon Coconut Oil

Pinch of Salt to taste

Half a Lemon (juice)



Directions:

1. Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, about 20 minutes.

2. Combine tomato, broccoli, onion, and garlic in the bowl of a food processor and chop.

3. Heat Coconut oil & Sesame oil in a large skillet over medium heat and add chopped veggies. Cook and stir until onions are translucent, 3 to 5 minutes. Add kale; cook until wilted, about 1 minute. Add liquid coconut aminos and a little water if needed.

 4. Add the 1/4 cup of cooked quinoa to the skillet with the vegetable mixture. Turn stove off but stir until heated throughout, 2 to 3 minutes. Add lemon juice and chopped garlic. Transfer stir-fry to a plate. You can garnish with chives, dried onion, olives, and cilantro! This recipes can be a base for many different variations!
